Moussaka is an aubergine based dish popular in the southeast of Europe and in the Middle East. The most famous version of this dish is the one made in Greece. It has three layers. The bottom one includes sautéed aubergines. The middle layer consists of cooked lamb, onion, garlic, sliced tomatoes, herbs and various spices (pimento, black pepper, cinnamon). On top of everything some there is some béchamel sauce or egg custard.
People love to experiment. Some use courgette and mushrooms. There are Greeks who decorate their moussaka with some grape leaves. In Bulgaria and Serbia people use potatoes instead of aubergines. In the Middle East moussaka is a type of cooked salad. Moussaka is traditional served lukewarm.
